Ingredients
  

  • 2 slices crusty sourdough bread or bread of your choice
  • 1 ripe avocado
  • 2 large eggs
  • 1/2 cup heirloom grape tomatoes halved
  • 1/3 cup cucumber shaved or thinly sliced
  • 1 tbsp white vinegar for poaching
  • Salt and cracked black pepper to taste
  • Optional: chives microgreens, or everything bagel seasoning for garnish

Method
 

Toast Your Bread Like You Mean It
  1. Toast those slices until golden and slightly crispy. You're building the foundation of greatness (literally and metaphorically).
Mash the Avocado
  1. Halve, pit, and scoop the avocado into a bowl. Mash with a fork. Add a pinch of salt and pepper. Bonus points for whispering self-love affirmations to your spread.
Poach Those Eggs
  1. Fill a saucepan with a few inches of water, bring to a simmer, and add vinegar. Swirl the water, gently drop in the eggs, and poach for about 3-4 minutes for runny yolks. Remove carefully with a slotted spoon and let drain on a paper towel.
