Ingredients

  • 1 1/2 tsp instant yeast

  • 2 3/4 cups all-purpose flour
  • 1 tsp salt always good quality—respect the dough
  • 2 tsp olive oil extra virgin, of course—accept no imitations

Method

    Wake Up the Yeast!
    1. In a big bowl, mix lukewarm water, instant yeast, and honey.
    2. Stir and wait 5 minutes.
    3. If the yeast starts to dance and bubble like it’s in Napoli on a Friday night, you’re golden.
    Make the Dough:
    1. Add flour and salt, mix with a spoon—or better, your hands!
    2. Add olive oil and knead like you're massaging life into it.
    3. 6–8 minutes by hand, or use a stand mixer if you're feeling fancy.
