Ingredients
  

  • 1 ripe avocado diced
  • 1 cup heirloom tomatoes
  • ¼ cup onion finely diced
  • 1 small garlic clove minced
  • 1 tsp extra virgin olive oil
  • ½ tsp sea salt
  • ¼ tsp cracked black pepper
  • Juice of ½ fresh lime about 1 Tbsp
  • 4 slices focaccia bread about 1-inch thick
  • ½ cup goat cheese crumbled
  • Fresh basil leaves torn or chiffonade, for garnish

Method
 

  1. Toast the Focaccia:
  2. Using top broiler of oven set at 485°F. Just until browning starts (Keep an eye on this or it can burn really quickly).
  3. Build the Topping:
  4. In a medium bowl, combine the avocado, tomatoes, red onion, and minced garlic. Drizzle in olive oil and squeeze in fresh lime juice. Season with sea salt and black pepper. Gently fold the mixture — keep the avocado chunky.
  5. Assemble:
  6. Spoon the tomato-avocado mix generously over each slice of toasted focaccia. Top with crumbled goat cheese and a scatter of fresh basil.
